About Ciro Estremo - General Manager Born in Italy, Estremo began his career as a wine steward with Sitmar Cruises. In 1986 he opened his own restaurant, Petaluma, in Sonoma County, California. In 1993, he worked as manager for both San Francisco’s Umberto Restaurant and Salute Restaurant in Marin County, California. Estremo began working with the Valentino Restaurant Group, serving as the General Manager of The Grill at Valentino, after he relocated to Las Vegas in 2000.
